Why Italian cuisine? Our chef discovered an exquisite soy milk produced in Izunokuni City.I wanted to somehow incorporate this soy milk into an appetizer, and specifically in an Italian dish.
This is the form I arrived at."We would like our customers to make tofu.""I wanted our customers to experience this exquisite soy milk," that's what I thought.Each batch of tofu will turn out uniquely.Please compare it to the tofu next door.They must be different.The gesture of stirring soy milk is reminiscent of the tea whisk used in the tea ceremony, so I've created a new path called "Mamefu-do" (Soy Milk Way).
A side note: This tofu is "the one and only tofu in the world." Please enjoy it by substituting "tofu" for the song.
